I can't recommend these Foil Wrapped Potatoes from Spend With Pennies enough.  The recipe is for the grill, but put them on a cookie sheet in the oven for 40-45 minutes, and they're an easy, filling, customizable meal.  A medium Yukon Gold potato for each person is just right.

We also really enjoy Crockpot Chicken and Gravy from Plain Chicken.  I like it with a bit more gravy, so I use a can of Chicken Broth.  It tastes much better on egg noodles than on rice, we think.

We tried this recipe tonight.  We would make it again, but in half a recipe. Also, it was agreed that the Parmesan Cheese wasn't a good match for the rest of the dish. Cheddar would be better.  I thought the Instant Rice didn't cook thoroughly, and there were crunchy bits of it. Also, I'd use a regular cooked chicken breast  as the taste and texture of the Rotisserie Chicken in this dish was not pleasing, to me at least.
