What’s Cooking November 24, 2021

 Time to start thinking of those Christmas Cookies, and cookies in general.  Here's a nice place to start.


I'm looking for a bigger scoop for my cookies.  I steal my son's two tablespoon scoop sometimes, but would rather have my own :)


The picture I first saw showed this being used for filling cupcake forms, and I could use help there.  I can't seem to ever fill any of them "two-thirds" full.  I know this would help! 



I would indeed love these prices.  Also, I'd like my turkey to come out looking as it does in this picture.



Isn't this brilliant?  I never seem to have just the right sized pan, or, I'd like to make a recipe in a small size.


Speaking of turkey, I need this chart to see how long to cook my 10 pound turkey.  Maybe I should have gotten a little bigger one, but there was my ten pounder or a selection of five hundred pounders. (Exaggeration.)

We all like a beef enchilada recipe from the Old El Paso Enchilada Sauce can, but this recipe from I Wash You Dry looks even cheesier.  She also has her own home made enchilada sauce that looks yummy.

We tried this recipe tonight.  We would make it again, but in half a recipe. Also, it was agreed that the Parmesan Cheese wasn't a good match for the rest of the dish. Cheddar would be better.  I thought the Instant Rice didn't cook thoroughly, and there were crunchy bits of it. Also, I'd use a regular cooked chicken breast  as the taste and texture of the Rotisserie Chicken in this dish was not pleasing, to me at least.

What's Cooking September 1, 2021

If you're the person doing the cooking, this is a good thing! 



What was actually cooking this evening here at DOA was Spaghetti and Meatballs.  I use Betty Crocker's Marinara Sauce recipe, mixing all ingredients in a blender first because I prefer a nice smooth sauce.  I also use only 3-4 cloves of garlic, depending on the size of the cloves.

 For the meatballs, I use 12 Tomatoes "perfect meatball recipe".  For these, I use a small scoop to form the meatballs, and place them on two pans and bake 20 minutes at 400 degrees.  I put about half in the crockpot with the sauce, and freeze the other half for the next time.  Cook on high for about three hours and it's really tasty.  I recommend using a finely shredded parmesan for the meatball.

This is serendipitous.  My son and daughter in law sent me a link to try a biscuits and gravy casserole they found on TikTok.   

Here we see the world has left me behind in the dirt.  I looked for a link to the written recipe in the comments of the video, looked up the name of the video maker, looked up the site. I simply wanted a list of the ingredients and amounts used, with written directions, because it's easier to look at something like that while you're cooking.  Nooo. Nothing like that.  

So I watched the thing about ten times, scrawled ingredients and amounts as fast as I could, then wrote instructions for myself as to what the layering order should be.

We're having it tomorrow night.  Could be good, could be gross.  I try to make requested dishes, but oof.  Write. It. Down. Someplace.
