What's Cooking April 7, 2022

From Vintage Recipes, the Magic Spice Cake sounds good, but not so much the creamy nut filling which turns out to also be the frosting.  Lukewarm paste?

DOA's Vegetable Soup

Looking at numerous Vegetable Soup Recipes, I created this recipe which probably needs tweaking, but it was very good. Not so dominated by tomatoes as those using canned tomatoes.

1/2 Medium onion diced

4 cloves garlic diced

3 small red potatoes, not peeled, cubed

1 cup sweet potato, cubed

4 carrots thick sliced

4 celery stalks thick sliced

1 large fresh tomato cut into cubes

1 tbsp tomato paste

3 tbsp butter

2 tbsp olive oil

32 oz Chicken Broth

1 tsp salt

3 turns of black pepper grinder

1/4 tsp oregano

1/4 tsp basil

1 bay leaf

In dutch oven, heat butter and olive oil on medium high heat. Add onion and garlic. Cook approx 2 mins or until softened.  Add all other vegetables, stir, turn heat to medium and cook 3 minutes.

Add spices. Add chicken broth. Bring to a boil, then simmer 45 minutes or until carrots are soft.

Here's a nice hot sandwich from The Salty Pot.  When I looked at it I thought it was made with Puff Pastry, but it is Crescent Rolls.  I'd honestly want to try it with the puff pastry first.  I wonder if it's a bit more flaky and sturdy to allow perhaps two kinds of cheese?  Or, adding some turkey as well as the ham.

What’s Cooking December 29, 2021

 The problem with evening posts, on a regularly scheduled basis, is that it's easy to forget about them.  What's Cooking Gets a Thursday Morning at 7 am spot beginning January 6, 2022.

I need this not for the half recipes but for making only a third of a recipe.  This is useful when trying out new recipes so you don't have leftovers, or worse, for the dreaded "that was gross, let's toss it".




I did very little decorating for Christmas this year. Next year, I vow to do it right, like this!  I need a mug tree for my Christmas mugs.  I haven't had one in years.  Got the cute chicken. Got the little cake plates and the wooden house.  I feel more festive already.




Having watched the Great British Baking Show, I know these were “over proofed”. Even so, this potato bread is soft and almost cake like. With Butter and Honey, it tastes like a light cake, in fact.  Recipe link when I find it :)  I printed it out and it's in my pile.  A keeper of a recipe.  Watch that proofing.







It's too late to add these to my New Year's Eve pile of goodies, but there's always time in the New Year for chocolate.
