What's Cooking March 3, 2022

 I've only made Apple Strudel once and it was wonderful. Problematically, I fused together parts of two different recipes, and I'm not sure I could reproduce them.

Is there anything more adorable than Easter Peeps? I love the diorama's people make with these pastel cuties. I just don't like eating them.  Even so, when I saw Butter with a Side of Bread's Easter Peep Krispies, I was ready to load up on the sugary little things to make these.

My desire for chocolate cake has once again proved my undoing. I’ve been wanting to make a recipe from the latest version of my Bettey Crocker Cookbooks. Simply called Chocolate Cake. I just want to say I followed the recipe exactly. I did a good job of greasing and lightly flouring the pan (I usually skip the lightly flowering part).  Good start, right?


Once baked and cooled however, neither cake layer would come out of the pan. I ran a butter knife along the edge. I tapped the bottom of the pan.


Finally they came out but a thin top of each later remained in the pan.

Better yet, I made the suggested Fudge Frosting with it.  Whoa. It made a lot of frosting, but it would not thicken up to be spreadable for anything. I finally just poured some between the layers, then poured some over the top. Like chocolate lava it slid over the sides of the cake and pooled up.

I haven’t had the nerve to try it yet.

When I worked in Wheeling WV, there was a shop that made Pepperoni Rolls that I think were just like these from Janet's Appalachian Kitchen.  So good! I'd walk down and get one or two for lunch or dinner more than once a week.




Pink is my favorite color, but I've seen pictures of some retro rooms lately all in shades of pink--whoa way too much.  This kitchen with turquoise added is perfect.

What's Cooking September 21, 2021

 I'm not sure I'd actually like pizza quesadillas, but it is an interesting concept.  Making it in a frying pan also crosses into is-this-really-a-grilled-cheese-sandwich territory.  So I would vote for baking them in the oven instead.  Using homemade sauce and really nice cheeses.  We got this, Princess Pinky Girl.

I have yet to find a lasagna recipe that is the rich, saucy, meaty, cheesy dish I'm looking for.  Baker By Nature's lasagna has three meats, red wine (which they should sell in tiny bottles for people who want to cook with wine but don't want to drink it) and a pleasant array of spices.  Fontina cheese is used in the ricotta portion, which I've used once before, and it was creamy and very nicely flavored.  The recipe makes a 13 x 9 inch pan, so definitely a half recipe for us.

From Vintage Recipes, the original Toll House Cookie Recipe.  Mixing soda in hot water before adding to flour mixture, there's something I've never seen.  I suppose chemistry minded cooks could explain it.




I like the idea of upside down cake but never really cared for the pineapple version.  Now this Swan's Down recipe with pecans, brown sugar, butter and a nice cake base sounds lovely.

Janet's Appalachian Kitchen is only on Facebook, but the recipes are that sort of down home cooking some of us crave.  Her recipes are right on the page, along with some homey comments.  Really worth spending some time browsing there :)
