DOA's Vegetable Soup
Looking at numerous Vegetable Soup Recipes, I created this recipe which probably needs tweaking, but it was very good. Not so dominated by tomatoes as those using canned tomatoes.
1/2 Medium onion diced
4 cloves garlic diced
3 small red potatoes, not peeled, cubed
1 cup sweet potato, cubed
4 carrots thick sliced
4 celery stalks thick sliced
1 large fresh tomato cut into cubes
1 tbsp tomato paste
3 tbsp butter
2 tbsp olive oil
32 oz Chicken Broth
1 tsp salt
3 turns of black pepper grinder
1/4 tsp oregano
1/4 tsp basil
1 bay leaf
In dutch oven, heat butter and olive oil on medium high heat. Add onion and garlic. Cook approx 2 mins or until softened. Add all other vegetables, stir, turn heat to medium and cook 3 minutes.
Add spices. Add chicken broth. Bring to a boil, then simmer 45 minutes or until carrots are soft.
