We all like a beef enchilada recipe from the Old El Paso Enchilada Sauce can, but this recipe from I Wash You Dry looks even cheesier.  She also has her own home made enchilada sauce that looks yummy.

We tried this recipe tonight.  We would make it again, but in half a recipe. Also, it was agreed that the Parmesan Cheese wasn't a good match for the rest of the dish. Cheddar would be better.  I thought the Instant Rice didn't cook thoroughly, and there were crunchy bits of it. Also, I'd use a regular cooked chicken breast  as the taste and texture of the Rotisserie Chicken in this dish was not pleasing, to me at least.
